Extra-tasty heirloom spare
ribs from Berkshire hogs, raised in pastures on the Newman family farm.
No chemicals are used on the feed, and no hormones or antibiotics are
used in the pigs.
I'm a fan of ribs-- it was
my favorite thing when Dad and his friends used to roast a whole hog
for 24 hours on a charcoal fire. In my search to re-create that farm-raised,
slow-cooked flavor, nothing I've found has really done the trick, until
now. Unbelievable marbling-- meaty flavor, nutty aroma, and fall-apart
tenderness.

right charcoal makes a huge difference, and we've found some that we're
